I am not the type of blogger who wants to share amazing recipes, but my mom made this amazing sweet potato toast for lunch yesterday and I have to share this delicious lunch with you, and it is a superfood, which means it makes you beautiful and I think that match this blog, so that’s why I wanted to share this.
My mom found the recipe for this lunch on personalfoodcoaching.nl this is a Dutch food blogger, I really didn’t know my mom reads blogs, haha.
Above a picture of my version of this sweet potato toast. I made one toast instead of two like the recipe said because one is more than enough for me.
Making the toast is very simple, chose a big sweet potato and make a slice of 1 cm thick and grill this slice in a grill machine or in a grill pan with a bit of coconut oil.
Cook an egg the way you like it the most, I chose for an egg with hard egg white, but soft yolk.
Make now the avocado spread, mash the avocado, add a bit citron juice, sea salt, and some red onion.
After that you can make your toast, first, you put the avocado on it and after that the egg and enjoy your healthy and delicious toast.
I added some salad, very simple, a bit arugula and cherry tomatoes with oil and salt and pepper. Delicious combination, I love this lunch and I’ll make it again.
